CULINARY - EXECUTIVE CHEF
Meet Ashley Gadson, the new Executive Chef at Willie G’s Seafood! Chef Gadson was born and raised in Chicago, Illinois. She has been in many positions in restaurants from serving to managing the front of the house, then headed to the kitchen as a line cook, then Executive Chef at Brenner’s Steakhouse. Now she has made the exciting move to the Galleria Area and is now the Executive Chef at Willie G’s Seafood!
Chef Gadson was asked to come work with a chef in the beginning of her career in his kitchen. This chef taught her the most basic skills of cooking, different cooking techniques and to care and be passionate about what you are doing. She learned to be open-minded and to always learn new experiences. Her culinary style is to find balance in taste and texture. Chef Gadson sees the bigger picture when it comes to small details in taste and placement of the food. Her signature dish would be a Cassoulet defined as, a meaty stew of poultry, sausage, pork, and beans, all under a rich, dark brown crust. Her favorite Cuisine is French Cuisine. When it comes to her favorite meal it would be Spicy Ramen. Some of her favorite ingredients are love, passion, and butter!
MEET JAY ON
Meet Jay On, Sommelier at Willie G's Seafood! With a strong background in hotel and restaurant management, he has carved out a niche in the wine industry. As a WSET Level 3 Sommelier and a current student of the WSET Diploma, he brings extensive expertise to his role. Jay was part of the opening team at Stella’s Wine Bar as a sommelier, and previously worked at Vic and Anthony’s Steakhouse, where he refined his skills and deepened his passion for fine wine. Outside of work, he is a huge fan of European soccer and dance music, with a deep appreciation for the vibrant culture surrounding both. By combining his love for wine with his passion for sales, Jay strives to deliver exceptional experiences and personalized recommendations.
MEET ALENI CERVANTES
Meet Aleni Cervantes, the Special Events Manager at
Willie G’s Post Oak. Cervantes’ hospitality career began in 2017
at Chart House Tower of the America’s in San Antonio. After relocating to Houston, Cervantes rose through the ranks at Willie G’s Seafood where she found her passion for creating memorable events.
Cervantes is deeply knowledgeable about fine dining and has
earned her Level 1 Certification from The Court of Master Sommeliers. Her expertise gives her a unique perspective when planning stunning events for guests at Willie G’s.
